This is my take on the world-famous Subway Luxury Avocado Shrimp Sandwich. I took a more traditional approach and got rid of the bread and added rice noodles and napa cabbage instead. Why doesn’t Subway sell these sandwiches in the U.S.?
Avocados first appeared with Japanese food in Los Angeles in the 1970’s where a Japanese chef was finding it hard sourcing toro for his sushi. The tasty, fatty portion of the tuna, with its melt-in-your-mouth consistency, was integral to his sushi menu. Since it was not readily available in California, he shifted to avocado instead. Avocado has the same toro consistency and it was abundant in the state. And it was already popular with Americans who knew it from Mexican cuisine. The sushi with avocado caught on and became widely accepted in America but still has not caught on in Japan where it is rarely found in sushi. But avocado is found at Subway!
What You’ll Need To Make Cold Avocado and Shrimp Wasabi Salad
For the dish itself, gather the following ingredients:
- Medium to large shrimps, shelled and quartered
- Rice noodles
- Avocado
- Napa cabbage leaves
- Toasted sesame seeds
For the wasabi dressing, bring together the following ingredients:
- soy sauce
- brown sugar
- rice vinegar
- wasabi sauce
Here’s How to Start
Start by making the wasabi dressing with 2 tsp of soy sauce, 1 tbsp of brown sugar, 1 tbsp of rice vinegar, and 1 tsp of wasabi sauce. Mix these ingredients together and chill for at least an hour. Fry your shrimp in a little bit of butter in a pan , quarter, and then cool. Cook the noodles until tender and chill in a strainer. Mix a little of the salad dressing with four leaves of Napa cabbage. Add in the shrimp, avocado, and the rest of the salad dressing, and toss to evenly coat. Plate the salad, noodles, and cabbage. Sprinkle the sesame seeds on top of the salad and enjoy!
Avocado & Shrimp with Wasabi
Ingredients
Avocado, Shrimp, and Noodles
- 4 medium – large shrimps shelled and quarted
- ½ oz thin rice noodles
- 4 leaves Napa cabage thinly sliced
- 1 tsp black sesame seeds toasted
Wasabi Dressing
- 2 tsp soy sauce
- 1 tbsp brown sugar
- 1 tbsp rice vinegar
- 1 tsp wasabi sauce
Instructions
- Start by making the wasabi dressing with 2 tsp of soy sauce, 1 tbsp. of brown sugar, 1 tbsp. of rice vinegar, and 1 tsp of wasabi sauce. Mix these ingredients together and chill for at least an hour
