December is a month of holidays and while we could’ve created a holiday-themed sausage, we wanted to play on the recent trend of ancestral recipes and naturally colored foods. Consumers are becoming more conscious of the products they put on and in their bodies, giving rise to foods colored with naturally derived plants. Today’s consumers are in constant search of clean-label options.
Introducing: Beef Borscht Sausage
It’s not to say colors from naturally derived ingredients didn’t exist before recent years, but colors were limited then. Today, the options are endless and lively thanks to new technologies at innovative companies. A great example is spirulina, a blue-green algae popular among food manufacturers. This month’s sausage includes beet powder, a substitute for food coloring.
Companies like Exberry are creating vibrant natural colors for food from fruits, vegetables, and edible plant exrtracts to use in uniqly-different new food varieties.
Beyond exciting colors, other manufacturers are even creating edible glitter varieties. Today, the range of natural color options available to food manufacturers is so vast that it could make Mariah Carey sing a higher octive!
Today’s market has slowly grown to include flavors we’re familiar with, as well as trending global flavors. Companies like Sweet Earth and Field Roast have expanded their product lines to include items like: Kimchi Cashew Burgers, Ginger-Scallion Sausages, Apple & Maple Breakfast Sausage, and Spicy Mexican Chipotle Sausage. A sustainable future can be a flavorful one.
